Chickpea Nut Butter & Carrot Sandwich

INGREDIENTS

1/3 cup chickpeas (garbanzo beans)
2 tbsp peanut butter
2-3 tbsp orange juice
2 pieces of bread
1 carrot, grated
Honey (optional)

1. Squeeze your orange (or open your carton, whichev.)

2. Put the chickpeas, peanut butter and orange juice in a blender.

3. Blend until they clump together.
Use just enough juice to create a hummus consistency.


4. Lightly toast the bread, and slather the chickpea mix all over both slices.

5. Top one slice with the grated carrot.

6. Add some honey if it tickles ya fancy

7. Unite the two halves of your sandwich in edible matrimony

8. Use any leftover 'hummus' for dippin.
